Happy National Dessert Day! We wanted to share with you a dessert recipe that we love to use during the harvest season with fresh Elderberries, but tastes great with re-hydrated dried Elderberries as well!
Elderberry Frozen Cream Dessert is an old family favorite recipe straight from the farm. I always had to double or triple this recipe when the children lived at home. We often use it in place of ice cream. The delicious and creamy blend of cream cheese mixed with whipping cream has the added tang from the berries. Lots of yummy-ness combined with the health benefits of elderberries.
We simply use whatever frozen berries that we have on hand to add to the fresh or re-hydrated Elderberries to mix it up each time we make it. Some of our favorites to add are strawberries, raspberries, blackberries, or blueberries. Add some of your own local berries too! Our northern friends who have access to huckleberries- they would make a great addition to this recipe!
Elderberry Frozen Cream Dessert
1 cup Dried Elderberries (rehydrate with 2 cups water over 24 hours)
1 pint Heavy Whipping Cream
1/2 cup Sugar
1, 8 ounce package Cream Cheese
1 cup Sugar
Make cream by whipping heavy whipping cream and 1/2 cup sugar until it forms stiff peaks (or use 1, 8 ounce container of whipped topping). Cream together the cream cheese and 1 cup of sugar. Fold together the cream cheese mixture, whipped cream, and berries. Freeze in a freezer-safe container for 2-3 hours. Enjoy!
