Elderberry Grape Popsicles
Frozen summer treats!
Here at Elderberry Family Farms, we’ve come up with another way to help you keep your cool… and get your daily dose of elderberries. And it’s a great way to get a daily dose of elderberries into the kiddos too!
Now we know that summer is not typically the time of year when you’re thinking about getting immune boosting foods into your kids. But have you considered? The viruses that cause the common cold are active all year round. Contrary to popular belief, it doesn’t have to be cold outside to catch a cold.
Catching a cold in summer is exactly like catching a cold in winter. The rhinovirus that causes the common cold can spread and infect people just as easily, even if it’s hot outside. And that’s only one reason why we think a daily dose of elderberries is a good idea.
These wonderful little berries also fight inflammation, reduce free radical damage, and help to combat stress. That’s because they’re loaded with antioxidants that fight the oxidative stress that damages your body’s cells. *
Many nutritionists agree, it’s just a good idea to get dark colored berries into your daily diet. And what better way than sneaking some into a refreshing summer treat?
Introducing Elderberry Grape Blueberry Popsicles. Yeah, we snuck a few more brightly colored berries in there just for fun. But you can use any combination of juice and fruit that sounds good. And to get you started, we made a list of some yummy juice popsicle combinations that are included with the recipe.

Elderberry Grape Blueberry Popsicles:
2 cups juice mixture (see instructions)
1 TBS warm water
3/4 tsp Elderberry Juice Powder
6 TBS frozen blueberries
Combine one 12 oz. can frozen grape juice concentrate, thawed, with two 12 oz. cans of water to make a strong, sweet juice mixture (this is less than the 3 cans that the label calls for). Use 2 cups for this recipe and set the rest aside for later.
In a large pitcher, combine the warm water and Elderberry Juice Powder and stir to dissolve, then add the 2 cups of juice mixture and stir to combine. Measure 1 TBS blueberries into each popsicle mold, then pour the grape juice mixture into the molds, leaving enough headspace for the sticks. Freeze until hard, about 24 hours. Remove popsicles from molds and serve immediately. Serves 6
Helpful Tips: We used a 6-slot popsicle mold with 1/3 cup juice per mold.
Modify this recipe to reflect how many slots your popsicle mold has and how much juice each slot will hold.
