Irish Scones:
2 cups flour
3 tsp baking powder
½ tsp salt
¼ cup sugar
¼ cup butter
2 TBS shortening
¾ cup half-and-half
1 egg
1/3 cup dried cranberries or currants (optional)
In a large bowl combine the flour, baking powder, salt and sugar. Add the butter and shortening and cut it into the flour using a fork or pastry blender until fine crumbs form. In a separate small bowl, whisk the egg and half-and-half together. Add this mixture along with the dried fruit (if using) to the flour and combine until a sticky dough forms. Turn dough out onto a floured board and pat into a circle, about 1 inch thick. Cut into biscuit rounds and place biscuits on a lightly sprayed or greased baking sheet. Bake in a 375-degree oven for 12-15 minutes or until very light brown. Serve warm with jam.
