Cinnamon Honey Crunch Popcorn
Makes about 6 cups
½ cup unpopped popcorn (about 5 cups popped)
2/3 cup packed brown sugar
5 TBS butter
2 TBS EFF Cinnamon Honey
scant ¼ tsp salt
½ cup sliced almonds
¼ tsp soda
Preheat oven to 250 degrees. Pop the corn in a hot air popper. Butter the sides of a large stainless-steel bowl, put the popped corn in the bowl, and sprinkle the almonds evenly over the top. Combine the sugar, butter, honey, and salt in a heavy-bottomed saucepan. Cook over medium-low heat, stirring constantly, until mixture boils. Boil for exactly 3 minutes. Remove from heat and stir in the soda. Pour mixture over popcorn and stir until well coated. Place the bowl in the oven and bake for 30 minutes, stirring every 10 minutes. Remove from oven and cool.
